Our Chef Paul moved to Australia in 2004 after spending over 20 years cooking in the UK. His resumé is impressive cooking including many 4-star motels and for high profile celebrities. Since arriving in Australia he has worked in many local restaurants and recently ran a very successful café in Eumundi. He endeavours to create a modern take on some classic dishes.
Our Sous Chef Mat served his apprenticeship in and around Melbourne. He moved to the coast in 2012 where he worked on Hasting Street before travelling around South East Asia and Japan. Mat has a fresh new approach to food and brings a taste of the Orient to many of our dishes.
Our bar manager Scott has been working in the hospitality industry for 25 years, including well know establishments in Sydney and the Gold Coast. This previous winner of Bar Tender of the Year has an extensive wine knowledge and a passion for creating cocktails. When he’s not talking wine or making cocktails he enjoys spending his time with his wife and kids at the beach.
